Thai Curry Chicken

Thai Chicken Curry

1 can coconut milk

2 tablespoons fish sauce

1-2 tbl curry paste – to taste

1 tsp dried lemon grass

1 tbl brown sugar

1-4 chili peppers – to taste

Cut up meat n cubes, brown lightly and set aside.  In same pan add above, combine and simmer for 5 min.  add diced onion, baby carrots and cook covered 10 min.  Add meat and cook for 10-15 min. Add veggies such as bamboo, straw mushrooms, baby corn, fresh mushrooms.
